Ingredients (for 4 toasts):-4 slices of multi-cereal bread (recipe here)
-4 slices of smoked trout
-4 eggs
-3 avocados
-1/2 lemon
-chive
-salt, pepper Peel and mash the avocados in a bowl, sprinkle lemon juice and taste to correct the seasoning. Season with salt and pepper, put aside.Poach the eggs, two by two in a casserole of very hot water and vinegar (once the water has boiled, lower the heat so the water stays hot, but there aren't bubbles to be sure the eggs will poach properly). Let them cook 3 to 4 minutes regarding your preferences.
Meanwhile, spread the mashed avocado on each toast, top with a slice of smoked trout. Once the eggs are poached, put them on top of the trout. Mince the chive above each toast and ground some fresh pepper and serve immediately.
